Salt and Pepper Prawns with Pineapple and Avocado

Serves: 4 | Prep time: 10 minutes  |  Cook time: 8 minutes


800g green prawns, peeled, leaving ail intact, deveined
1½ tsp sea salt flakes
½ tsp black pepper
1 tsp allspice
1 tsp sesame oil
1 tbsp extra virgin olive oil
½ medium pineapple, peeled, finely chopped
1 long red chilli, seeded, finely diced
½ bunch fresh coriander, chopped
1 lime juice, zested and juiced
¼ red onion, finely diced
1 avocado, diced


  1. To make the spice mix, combine salt, pepper, allspice and sesame oil.
  2. Add prawns to a large bowl and mix to coat prawn pieces in spice mix.
  3. Heat a drizzle of oil in a large frying pan over high heat. Cook prawns in batches for 2 minutes on each side or until cooked. Transfer to a serving plate.
  4. Combine pineapple, chilli, coriander, red onion and lime juice in a medium bowl. Toss to combine. Add the avocado and gently toss.
  5. Top prawns with salsa and sprinkle with lime zest.
